Corn Chowder
It's a cool Autumn day in South Carolina. It's perfect football weather and chowder weather. I decided to make a delicious homemade corn chowder.
Ingredients:
1/2 lb. Bacon
1 c. Onion, chopped
2 tbsp. Butter
3 c. Chicken Stock
2 c. Milk
3 med. Potatoes, cubed
Salt and Pepper to taste (I use fresh ground pepper)
1 can cream-style corn
1 can whole kernel corn
2 carrots, chopped
2 tbsp. all purpose flour
Directions:
1. Fry bacon in pan until almost done. Add onions and saute until slightly browned
2. Transfer to a cooking pot. Add both cans of corn, butter and chicken stock. Add carrots and potatoes. Cook for 15 min.
3. Mix together flour and water to form a paste.
4. Add milk and flour paste. Simmer for 30 minutes or until you are ready to eat. Add salt and pepper to taste. Serve with shredded cheddar cheese, bacon crumbles, and sour cream.
