~Banana Bread~

One of my favorite recipes to make is Banana Bread.  We always have a couple of overripe bananas lying around, so this is a delicious way to use them.  It makes a moist and lightly sweetened bread.  This recipe is one of my favorites.  


Banana Bread


1 stick butter, 1 c. sugar, 2 eggs, 3 bananas mashed, 2 c. flour, 1/2 tsp. soda, 1/2 tsp. good vanilla, 1 c. pecans chopped


Preheat oven to 300 degrees.  Cream butter and sugar.  Add eggs and beat well.  Add mashed bananas, flour, soda, vanilla, and nuts.  Pour into 2 small greased loaf pans, or one tube pan.  Bake at 300 degrees for 50-60 min.   


*I also make this w/o nuts and it's wonderful!!

~Gooey Butter Cake~

This is a recipe from Paula Deen's website. It's similar to the ever popular Lemon Bars, but calls for cream cheese instead of heavy cream. The average rating was 5 stars, however, I gave it 3 stars.  This recipe called for a cake mix crust and a  filling which called for 1 lb of powdered sugar.  The cream cheese filling was very good, but the crust is what was super sweet.  If anyone decides to make this particular recipe, I would suggest using your own shortbread crust and only using 1/2 lb. of powdered sugar.  I don't think I will be making this certain cake anytime in the near future.  But if you try it, please let me know how your's turned out!


Ingredients:

Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar

Directions

Preheat oven to 350 degrees F.
Combine the cake mix, egg, and butter and mix well with an electric mixer.  Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.  Prepare Filling
In a large bowl, beat the cream cheese until smooth.  Add the eggs, vanilla, and butter and beat together. 
Next, add the powdered sugar and mix well.  Spread over cake batter and bake for 40 to 50 minutes.  Make sure not to over bake as the center should be a little gooey.
Servings: 6 to 8 servings

Cook Time: 40 min
